Chickpea and lentil curry
Ingredients:
1 onion, diced
1 garlic clove, minced
1 tin chopped tomatoes
1 tin light coconut milk
1 tin chickpeas
1 tin green lentils
1tsp garam masala
1tsp curry powder
1/2tsp cumin
1/2tsp turmeric
3 handfuls spinach (or 2 frozen blocks)
Recipe:
1. In a pan, heat a table spoon of olive oil. Add the onions and sauté.
2. Add the mince garlic and sauté for a further minute.
3. Add the spices and stir.
4. Add in the chopped tomatoes and leave to simmer for 3 minutes.
5. Next, add in the chickpeas, lentil and coconut milk.
6. Leave to simmer for 10 minutes on medium heat.
7. Stir in the spinach and leave for a further 2 minutes.
Serve with chapatti or naan bread or rice.
